The Perfect Lunch Salad

The title says it all dear friends! This is the perfect lunch salad and my go-to recipe almost every day: Greens, Radishes, Cucumber, Avocado, Green Onion, and Seeds. All with a lemon juice dressing and often with a side of leftover roasted potatoes or freshly steamed potatoes.

This salad is vegan, paleo, nut-free, oil-free, RAW, Medical Medium friendly and absolutely delicious!

Eating healthy doesn’t need to be complicated! My best trick to eating healthy is to find some favourite recipes and eat those every day. As soon as I start getting fancy or placing high-expectations on myself, I end up reaching for grains or other foods that are less nourishing. So find a salad that you love and stick with it! This one is my go-to for lunches.

Every ingredient in this salad is healing but here are a few tid-bits:

Radishes are one of the most healing foods you can eat as they help clean up the body, repel cancer, and are excellent for the heart and promoting good cholesterol levels.

Leafy Greens are another healing food as they are full of easily digestible minerals and gently sweet the intestines as they pass through our system.

Cucumbers are incredibly hydrating and reverse chronic dehydration. Eating cucumbers daily is life-changing. (Source)

Another perk to this green salad is that all of the ingredients stay fresh for a week in the fridge so if you’re like me and grocery shop once a week, this salad will always taste fresh.

Making this 28-day cleanse friendly: lessen the amount of seeds, salt, and avocado (or omit all together). Another 28-day cleanse friendly recipe is this Simple Papaya salad or this Creamy Avocado Dip.

Making this Liver Rescue 3-6-9 friendly: During the first three days, when you are only able to eat fats for dinner, omit all the fats (seeds & avocado) and increase the rest of the ingredients so you feel satisfied for lunch.

The Perfect Lunch Salad

With all the nutrition and tastes that you need to feel amazing, this oil-free salad wins every time when I'm deciding what to make for lunch. This salad can also be adapted to be Medical Medium 28-day cleanse or Liver Rescue 3-6-9 friendly. I often eat this with a side of a few potatoes, though not always.

Ingredients

  • 3 handfuls mixed greens or spinach
  • 3 radishes, sliced
  • ½ cucumber, sliced
  • ½ avocado, cubed
  • 1-2 green onions, sliced thin (to taste)
  • 1 tbsp sunflower or pumpkin seeds (to taste) *see tip at the bottom
  • ½ lemon, juiced
  • 1 handful sprouts (optional)
  • sea salt, herbamare, and/or pepper to taste

Directions

  • Mix it all up, drizzle the lemon juice on top, and pack it in a container for lunch or serve immediately.

Tips

Make sure when you buy your seeds that you are buying raw seeds or dry roasted seeds with no additional ingredients. Sometimes when they are roasted they are cooked with canola oil. To heal deeply, it’s best to stay away from canola.
